  • Definition of Glycemic Index: The glycemic index (GI) is a unique number, ranging from 0-100, that indicates a particular food's effect in raising a person's blood glucose (also called blood sugar) level. Foods that cause the most rapid rise in blood sugar were given higher G.I. values, and. pure glucose has a GI value of 100.
